To say I love you Mum, this heart evokes tenderness, children’s drawings and poems learned in secret. Because we love to play with seasonal fruit to enhance the timeless delicacy of the Pavlova, for Mother’s Day we’ve chosen to combine a beautiful bouquet of fresh strawberries and raspberries with the delicate flavour of jasmine tea.

Composition : Crisp Swiss meringue. Chantilly with cream infused with jasmine tea*. Jasmine tea* confit. Fresh strawberries and raspberries. Decor: edible flowers according to availability. *From Comptoir Français du Thé.

For Mother’s Day or simply to celebrate the beautiful days of May, our Dahlia to share invites itself as an elegant gourmet bouquet to the center of the table to celebrate women, those who give life, those who hope and those who prefer simply to be mothers at heart. The light lemony and verbena notes of the berries delicately underline the fruity flavor of the strawberry and the gourmandise of this dessert, also available in an individual version.

Crispy with millet seeds and crushed whole almonds. Almond pain de Gênes biscuit. Confit of strawberries. Verbena berries Crémeux’s. Only in the entremets to share: ganache with cream infused with verbena berries. Light Madagascar vanilla mousse. Decor: strawberry confit and a few of fresh raspberries.

Freshness, lightness, creaminess, delicacy, the Fraisier is the ultimate summer dessert. It has the taste of shared moments and for the Chef Nina Métayer, the one of her birthday cake. Tiered “pièce montée”-style Fraisier for groups of 10 or more, by quotation only.

Strawberry Pavlova, meadow spirit

The crunchy roundness of meringue. The gourmet lightness of Chantilly with notes of verbena. The taste of the first fresh strawberries sublimated by the confit of fruits and the freshness of an aromatic herb pesto. Our elegant Pavlova, which returns with the warm weather in a new, gluten-free version, evokes all the sweetness of spring.

Crunchy Swiss meringue. Gluten-free almond Pain de Gênes biscuit. Chantilly with cream infused with verbena leaves. Lightly sweetened pesto with fresh leaves of mint, basil and verbena, almonds and a hint of olive oil. Strawberry confit. Fresh French strawberries. Decor : small mint jelly cubes and white pansies or other small edible flowers as available.

The olive tree, symbol of peace, also evokes strength. This is also the spirit of this entremets with strong flavors that will seduce chocolate and olive lovers. For this association, the chef has found the right balance between the sweet chocolate flavors, the freshness of lemon zest and the fruity power of the Kalamata olive.

The textural play of our Fleur match perfectly with the deliciously fruity and delicately sweet-tart flavours of strawberry and rhubarb, which enhance its ultra-gourmet freshness.

Crispy with millet seed and crushed whole almonds. Pain de Gênes biscuit with almonds. Light mousse with elderflower syrup. Strawberry compotée, pieces of roasted rhubarb, fine brunoise of raw rhubarb. Decor velvet effect.

Deliciously comforting, the timeless flavors of this sharing cake play with the sweetness of the chocolate, the roundness of the crémeux, the lightness of the mousse and the subtle notes of Earl Grey tea.

Crispy chocolate shortbread with PDO butter, cocoa*, Guanaja 70% dark chocolate, feuilletine and a hint of fleur de sel. Soft True Gold* cocoa biscuit. Thin sheet of dark chocolate. Vanilla Crémeux. Light mousse with Earl Grey-infused cream from Comptoir Français du Thé des Thés and Cacaosphère’s dark Caribbean 66% and Peruvian 44% milk chocolates. Dark Crimson Red* cocoa glaze.
