Discussions, trials, innovation, creation, 3D printing, original moulds… With her teams, Nina Métayer has imagined this log as an elegant and playful centrepiece for the table, an invitation to share delicious moments together. The caramelised pear, the citrus notes of dried black lemon, the almond flavour of the biscuit, the taste of fir shoots… On the first two floors, the flavours of the entremets evoke the magic of Christmas preparations, while the reassuring smells of fir, mandarin orange and spices gently transport us to our fondest childhood memories. Above, the tip of the fir tree is a sweet that hides chocolates under its shell, to be shared with the little gourmands running around the table.
The entremets (the 2 layers at the base of the cake): crisp shortbread made with Moulin Viron French flour, Charentes-Poitou PDO butter, muscovado sugar and blackcurrant pepper, feuillantine, white chocolate and a touch of fleur de sel. Soft pain de Gêne biscuit. Caramelised pear compotée, then spiced with Maison Boteh dried lemon powder. Light milk mousse infused with organic fir shoots from France Sapin. The candy (the tip of the fir tree, 3rd floor): white chocolate shell, small dark chocolates inside. The decoration on the 3 floors: green flocking in white chocolate. Home-made small feathers in white chocolate. White homemade candy sugar marbles, gold leaf.
The Fir Tree : to share for 12 people. Approx. 19cm x 26cm high and 1,7kg. Box and cake stand.

Living in Mexico for a year at the age of sixteen had a profound effect on Nina Métayer. Her homeland inspired this creation, whose delicate motif evokes the Temple of the Feathered Serpent, one of the pyramids of Teotihuacan, not far from Puebla, where she lived. Nina created the two original feathers with her own hands, sculpting them from the raw material of a block of chocolate and using them to make the moulds. With this log of character that invites you to travel, the Chef also shares the flavours she discovered in Mexico and loves so much: the corn flour of the tortillas; the power of the chocolate; the smoky notes of the chipotle pepper; the liveliness and freshness of the lime.
Corn flour crisp, Charentes-Poitou PDO butter, 70%* chocolate, praliné with homemade popcorn. Soft biscuit with Rich Terracota cocoa from Deezan. Lime segments marinated in brown sugar. Crémeux with milk infused with roasted corn and Mexican Pompona vanilla. Chocolate mousse 70% spiced with chipotle pepper. Fine chocolate shell 70%*. Crispy feuillantine with almond and hazelnut praline. Soft chestnut biscuit. Madagascar vanilla cream, blackcurrant and cognac chestnut cream*. Light mousse with chestnut paste and cognac*. Crispy feuillantine, roasted coconut powder, millet seeds, Linnolat white chocolate with coconut and a touch of fleur de sel. Soft almond and coconut biscuit. Mango and passion fruit compote, diced fresh mango. Light mousse with combava zest and lime. White chocolate icing. Lime ganache. Lime zests. White chocolate decor.

How to order for Christmas
The Yule logs presented on this page are only available for pick-up dates between Wednesday 4th and Sunday 31st December.
Each order on Délicatisserie is linked to its date of receipt, so you must place several orders if you wish to order for different dates!
Pre-orders are strongly recommended
All year round, and even more so during the festive season, La Délicatisserie has to make do with its own artisanal production capacity, as well as delivery and storage capacity at its various collection points. This is why certain products, certain dates, in particular 24, 25 and 31 December, and certain collection points may quickly become unavailable.
What's more, as soon as the maximum number of signature Yule logs (The Fir tree and The feather) in very limited editions is reached, they can no longer be ordered!
