Moelleux cake mandarin and hazelnut

With the first wintry weather, the return of citrus fruits brings a slightly tart flavour of this little mandarin cake. Its moist texture goes perfectly with the crispy roundness of its buttery crumble and hazelnut pieces. This little treat can be enjoyed anywhere, anytime: in the morning, as a snack, with a cup of tea, or to accompany a beautiful autumn evening!

Composition

Cake* soaked in mandarin syrup. Confit of mandarin, zests of mandarin and hint of yuzu. Crumble* with French hazelnut pieces, brown sugar and a pinch of fleur de sel. *French flour from Moulins Viron, Charentes-Poitou DPO butter.
