Citrus Pavlova

Our Pavolova, always gluten-free, takes up winter residence to enhance the flavour of citrus fruits, seasonal fruits that awaken the senses when the cold weather arrives. Their tangy notes bring freshness to the sweetness of the meringue and the fragrant roundness of the Chantilly cream with orange blossom water. The delicate petals made of fresh Buddha's hand fruit, candied by us, deliciously highlight its subtle flavours and interplay of textures.

Individual or to share for 4, 6, or 8 people.

Composition

Crispy meringue. Pear compotée in syrup and lemon confit. Chantilly cream with orange blossom water. Fresh fruit: grapefruit, orange and lime segments. Decor : homemade Buddha’s hand petals confit in Madagascan vanilla syrup, small cubes of pear in syrup, lime zest.

Allergens: milk, eggs, nuts, soya, fish gelatine.

Advice

Tips: keep refrigerated and remove from the refrigerator at least 15 minutes before serving.
