Raspberry and red pepper Flower

Our Flower reinvents itself with the changing seasons and new inspirations. This brand-new version reveals an unexpected yet subtle combination. The slightly tart notes of the raspberry blend delicately with the sweet and subtly smoky flavour of the red pepper. The interplay of textures is also enhanced, ranging from the crispiness and the richness of the confit to the slight crunch of the finely diced red pepper and the smoothness of the cream.

Individual dessert.

Composition

Crispy with roasted almonds and hazelnuts, white chocolate and crêpes dentelles. Joconde biscuit. Raspberry confit and slightly crunchy pan-fried red pepper thin Brunoise. Bavarian with cream infused with lightly roasted red pepper.

Allergens: gluten, eggs, milk, nuts, fish gelatine, soya.

Advice

Tips: keep chilled and remove from the fridge 15–20 minutes before serving to allow the flavours to develop.
